Starfield Zoology skill overview
The Starfield Zoology skill is a tier 2 skill in the Science skill tree. It, as with all Starfield skills, has 4 ranks, beginning at rank 1 and ending at rank 4. In order to progress up the Zoology skill tree, you will need to complete various skill challenges related to the skill in question, and increase your Starfield level to earn skill points. Each rank requires a skill point to unlock.
This skill allows you to gain organic resources from alien creatures without harming them, enables you to gain information about them using your scanner, and gives you the option to produce animal resources at your outposts. The Zoology skill is a useful skill if you want to learn more about alien fauna while also avoiding harming them while gaining organic resources.

No one could have expected the number of new species encountered on alien worlds, or the importance of those skilled in their behavior and domestication.
The Zoology skill has the following ranks and stats:

Get more common organic resources from creatures and harvest from them without harming them, learn additional info about them from the scanner, and allows you to produce animal resources at your outposts. Harvest organic resources from 20 creatures. 2 
Get more uncommon organic resources from creatures, and learn information about them more quickly using the scanner. Harvest organic resources from 50 creatures. 3 
Get more rare organic resources from creatures, and learn information about them more quickly using the scanner. Harvest organic resources from 100 creatures. 4 
Occasionally harvest additional rarer resources from creatures, and learn information about them more quickly using the scanner. You have mastered this skill.
How to unlock Zoology console command
If you want to add the Zoology Starfield skill to your character without increasing your Starfield level or expending a skill point, simply open the Starfield console command window with the apostrophe (‘) or tilde (~) key and enter the following command:
player.addperk 002C5552
By repeating the player.addperk 002C5552 command, you can bypass the Zoology rank-up challenge and unlock the next rank. Entering the above command four times will unlock the rank 4 Zoology skill.
To remove the Zoology skill, you can use the following command:
player.removeperk 002C5552
